Early Harvest: Production challenges Await​

Across many wine regions, the 2026 harvest is arriving earlier than expected. Heat and accelerated ripening are compressing picking schedules and putting additional pressure on winery operations at a time when decisions about fruit quality, fermentation and production need to happen quickly.

Compressed harvests can also increase variability between vineyards and lots while leaving less time to address wines that don’t develop as intended. Smoke Taint: New Strategies For Minimizing Impact

Wildfires are again affecting wine-producing regions during a critical stage of the growing season. Recent fires in France and Spain have burned through or near vineyard areas just as harvest begins, while producers in other fire-prone regions face the same recurring risk: vineyards may survive the fire but still produce fruit exposed to significant smoke.

Smoke-related compounds can become increasingly apparent during fermentation and wine development, leaving producers with difficult choices between aggressive treatment, blending, downgrading or sacrificing valuable inventory.

Steric provides a new tool for managing that tradeoff. Precisely controlled electromagnetic processing disrupts molecular associations involving guaiacol, methyl guaiacol and other smoke-related compounds within the wine matrix. This can make targeted compounds more accessible to subsequent fining or other refining techniques. Rather than replacing conventional remediation, Steric can be calibrated around it to help improve selectivity — addressing smoke-related characteristics while preserving more of the wine’s fruit, aroma, structure, mouthfeel and varietal character.

This changes the remediation strategy. Instead of beginning with increasingly aggressive treatment and determining afterward how much of the original wine remains, a winemaker can evaluate Steric first, establish the level of improvement, and then determine the minimum additional refining required. The potential result is less intensive treatment, better preservation of the underlying wine and a greater opportunity to return affected inventory to its highest-value viable use.

RTD Flavor Management For Wine Producers

Wine-based RTDs, spritzers and other ready-to-drink formats create new opportunities for wine producers, but they also introduce a different flavor challenge: multiple ingredients must come together as a single, balanced finished beverage while still delivering the economics required for a successful RTD.

Steric can be used at multiple stages of RTD production, not simply on the finished beverage. Producers can evaluate Steric on the base wine, juices and other liquid ingredients before formulation; on intermediate blends as ingredients are combined; or on the completed RTD before packaging. That flexibility allows the production team to determine where treatment creates the greatest sensory and economic benefit.

Processing individual ingredients can also create new formulation options. Steric can be used to address bitterness, astringency, mouthfeel, integration or other undesirable sensory characteristics in an ingredient before it influences the entire formulation.
